There are a few apps that are great demos for the iPhone. Pulse News is a super RSS feed reader, iMovie always drops a few jaws, and Siri is a pretty amazing way to talk to your iPhone and get intelligent search results.

I bought Prizmo yesterday. I used before business card reader but there are several issues with iOS 4.0 and still no update.
I was also a little bit suspicious due to the comments on the appstore. I think they are not enough careful when they take pictures. Prizmo works very well with my iPhone 3GS. With my business card, I just had to correct the city field in the address. I also scanned the full page of a book and the accuracy was very good.
PS: I have some other good APPS from aneesoft want to recommend. Maybe someone will like it.
